You’re invited to a dinner party at the last minute and you have a little bit of time to produce an impressive dessert. This one will be even more impressive because it is made out of fruit and nuts (no dairy, no flour) and will taste amazing.
For the crust, process 1.5 cup of nuts (almond, cashew or macadamia will work), 1 cup of dates and a pinch of sea salt. Be careful not to over process and stop when it sticks together enough to press it i
nto a pie plate as a raw crust. Voila! No need to turn on the oven.
For the filling, blend the following in a vitamix: 3 cups cashews or macadamia nuts, .75 cups lemon juice, .75 cups grade B maple or honey or any syrupy sweetener, .75 cups of coconut oil liquefied, and 1 tbsp vanilla or 1 scraped vanilla bean, with .25 cup water or a little more if needed. Blend just until smooth, but don’t overblend as the nuts will separate from their oils if you blend too long.
Top with any fruit, edible flower, lemon or orange zest, or make a chocolate ganache and swirl it in with a knife and refrigerate. Chocolate ganache is made by blending .5 cup warmed coconut oil, 1 cup raw cacao or cocoa powder and a .5 cup of grade B maple or honey with a pinch of salt.
